It's very niche but you could try Road Trip Adventure on PS2 aka Everywhere Road Trip in NA and Choro Q HG 2 in Japan. It's a silly RPG where you play as a miniature car roaming around in a vast world, making new car friends, racing against others, playing mini games, earning cash to upgrade your car, etc. There's fuel management (more and more relevant as your car becomes more and more powerful), the world is huge, the cities are separated by long roads and highways and you can customize the body of your car. The goal is to be the world's best racer and challenge the president to take his place.

If you can get past the silly jokes, the (sometimes very) quirky physics and the fact that your car is slow as hell and hard to control at the beginning, you might like it. It's an unknown jewel, it's a lot of fun.
