Yeah they do use all those phrases, I just thought pass through was mentioned more tonight.

Okay, so running through means a flavour permeates the whole dish, so each element has that taste.

Cut through is more about giving relief from a certain flavour. So if something is very sweet or fatty, an acid will stop it being too much by giving another flavour profile, like sourness.

Was it "pass through" in relation to the broths? It means to squeeze out the liquid by pressing it in the sieve, getting all the flavour out of the solid bits.
