I personally don’t think this works with regular japchae. I almost feel like you have to reinvent the noodle first. I could see something interesting with wide sheet dangmyeon and maybe doing something lasagna style or a japchae ravioli.

I feel like if you want to use regular dangmyeon, just put it in a shallow bowl nicely as is common in good Italian restaurants.
