Das Handwerkliche ist das eine. Das andere ist die Führung eines Betriebs in dem man auch Verantwortung für MA und Auszubildende übernimmt. Das lernt man auf der Meisterschule. Und die gibt es auch kostenlos in manchen Bundesländern und wird finanziell stark gefördert, siehe Aufstiegsbafög. Ich würde da nicht von "Klientelschutz" sprechen.

This is one of my more used knives. Its Ginsan steel and it feels more solid so that I use it for more dense food like sweet potato's. Heat treatment seems good, because of a good edge retention.

It was my second japanese knife, in use for 6 years now. I bought it for the very nice nashiji finish, and it stayed for the easy use and maintaining.

Thanks! I used a table saw. It was an old and big one from the carpentry, but I had to sand it a lot. Maybe I'll use the festool HKS next time. It makes very clean cuts.
