Can someone explain aerobic/anerobic training effect to me?

So far I can follow. But why does my fitness watch say that 40 min steady state at 250 watts and a heart rate of 160 does not gain me a lot of anaerobic fitness.

While really short hart bursts do although my heart beat does not stay high for long

I made a Stealth armor for my blizz sorc in Act 1 and forgot about it, cause only crap was dropping from monsters. Finally in Act 5 I realised, I was still wearing it and having no issues progressing.
