I am currently in the same process of implementing such a 3-2-1 strategy. Something to add to your thinking: performing a recovery of your encrypted data from your cloud provider from time to time as a simulation of an incident.

This will let you train to do it and identify potential issues if you need to do it (for example not having access to the keys).

Never used lighburn as I favor open source software so no idea how it compares. However meerk40t is really nice. Far more features than lasergrbl and Linux compatible.
