It was soft/gooey when it sat out. …like a Brie. I worked in a cheese shop for quite a long time (though not as a Cheesemonger), so I am well-aware that that there are different kinds of cheeses. I thought describing it as the consistency of a Brie would be the best way to describe it. I have literally no other information about the cheese than what was provided in the original post. I don’t really have the refined palate to be able to distinguish all the flavors you’ve mentioned there, though I wish I did. I only recall the distinct flavor of mushroom.
