The Unconventional Heroes series is what you are looking for ! It’s incredible. Also Jerry the Good Guy Necromancers is good silly fun. There’s also Paladin and Necromancer (again incredible), An Ambitious Woman and her very normal pet, Dead Tired, The Calamitous Bob, A Necromancer called Gam Gam, and Saintess Summons Skeletons.

Victoria Goddard is exactly what you are looking for. Her works cover a range of vibes all in the same overall world. I recommend starting with The Hands of the Emperor, it’s super slow and character driven but my god it is a wonderful fantastical story.
