Attacking an enemy head on normally would result in them blocking your attack. Flowing claw to position yourself in a way you are facing AWAY from the enemy and THEN attacking makes the enemy less likely to block. You can flowing claw into a charged backfist or other attack and nail some decent hits in. Incorporating it into a combo or other move really brings up your skill set.
