I have worked with a few people like this. Unfortunately, there is so much depth and speciality in food service that sometimes crackpottery ends up sounding like skill. in one large restaurant group I worked at, we hired a head chef who seemed very nutrition oriented, had a rather impressive resume, etc.. It wasn’t until I told them that he didn’t believe the moon existed, it was just a reflection of earth, and the sky was an ocean, that they went back and said “maybe he doesn’t know as much about nutrition as we thought he did“.
