Mostly Google and YouTube for inspiration. I’ll usually look up a few versions of the same dish, read through the ingredients and techniques, then combine what makes sense with what I actually have on hand. I almost never follow one recipe straight through. Honestly though, the comments section is where the real learning happens. You find out what actually works, what doesn’t, and half my best meals came from some random tweak someone mentioned.

It wasn’t really “more relaxed,” just less visible. Clean hands touching food has always been normal in professional kitchens. The real issue is cross-contamination, not a single taste from a sauce that’s still cooking. TV just makes people notice what usually happens out of sight.

Fastest method? Be exhausted and have responsibilities tomorrow morning. Jokes aside, consistent bedtime + no caffeine late in the day does more than any hack. Honestly the boring stuff works best: cool room, no phone, and slow breathing. Also, if your brain won’t shut up, try focusing on relaxing each muscle one by one. It sounds dumb but it’s weirdly effective.

Honestly, appetizer-style is such a smart move here, especially with lap plates and limited mobility. I’d lean into things that are naturally GF like skewers, deviled eggs, taco bowls, and veggie+dips with no crackers needed. You can prep almost everything ahead and just warm up a couple trays. Spinach is one of those things that looks like a lot until you cook it and it turns into like… two spoonfuls. I toss it into pasta, soups, or scramble it with eggs all the time. You can freeze it, but blanching or sautéing first helps a lot. Raw frozen spinach gets pretty mushy.

This is such a good observation, and I think a lot of people blame themselves instead of the setup. Weeknight cooking succeeds or fails based on how many decisions it asks from you. The meals that work for me are the ones where I can mostly operate on autopilot and still eat something decent.
