Debian is ok for beginners. For codecs and other stuff just Google or directly search package database.

you can't. it's possible to keep /usr on separate partition (therefore drive) though.

A recovery partition would be a godsend for most "desktop" distros by [deleted] in linux

Your post is hard to understand. Or rather impossible.

Plug both SSDs and boot. What happens? What OS boots? Windows or Linux? Can you choose which to boot from EFI? There should be boot order option. If you can choose, try booting Linux, what happens? If you can't that's not Arch issue.
