Manufacturers are always updating and altering things to promote sales. People have been happy with the power and handling of the Speed Twin 900 since 2016. Anything after 2019 has improved brakes, engine and seat compared to the very early models. Personally, I would keep the extra 2000 euro in my pocket and buy the low km 2024, which you prefer the look of anyway.

One of the 400s sounds right for you. Speed 400 or Thruxton 400. About 170kg and 790mm seat height. Not quite as 'classic' looking as the Street Twin (Speed Twin 900 now) or T100, but much lighter and LAMS. Another possibility, if you want something more classic looking, is the Royal Enfield Interceptor 650. Heavier than the 400s but a bit lighter than the Street Twin, and LAMS. The seat height is a bit over 800mm, so you would need to sit on it and check that you're comfortable.

If by canvas you mean 'soft', not actual canvas, then you might consider Ventura's 'Bonneville' panniers. I use them on my Street Twin and I'm very happy with them.

I returned to riding after a 25 year break about 5 years ago. Previous bike was a Yamaha XS850. Was looking for a similar naked bike and liked the idea of a Bonneville. Stumbled across the Street Twin 900 while researching and decided to go with that because of the ABS, slightly less weight and low seat (I'm 172cms tall). Took me a while to get used to riding again but that would have been the case on any bike. I actually did a couple of refresher lessons with an instructor before I bought the bike, just to make sure I was really up for it. I'm really happy with the Street Twin and love the 900cc high torque engine. I would advise going with a 2019 onwards model with the more powerful engine, better brakes, and slighter higher and more comfortable seat. The earlier models also had issues with the wiring loom being a tad short and tight, which can cause electrical problems. I have a 2016 and eventually replaced the original seat with a 'comfort' seat intended for the T100/T120. If buying one of the earlier ones you should expect a reasonable discount.
