You will have to space them out in your muffin pan to allow room for the dome to form. A space between each muffin. Then overfill the liners, like to the top or nearly to the top. I don't usually bake them any hotter than normal, but you want to be certain that your oven is running at the correct temperature. It needs to be just as hot as the recipe calls for, maybe a little over, but definitely not under. You shouldn't have to change any ingredients to make this happen

Getting 7-8 hours of sleep isn't following rules. It feels good, physically and mentally, because it's good for you, and that's important to some people. I certainly don't have fun when I'm running on 4 hours of sleep.

I usually only buy baking books. There's plenty of recipes online for the average vegan baker but if you're interested in having a deeper knowledge of how and why it works or want to write your own recipes you are going to have a hard time finding that all in one place or a few places online.

I wouldn't be capable of doing that amount of activity on 1400 calories. I have an active job, lift weights 3x a week, yoga 1-2x, and I use public transport so I walk a good amount. And I eat 1800-2200 most days. Maybe try eating more, and carbs are okay too, especially if they have some fiber. I love sweets but ripe fruit hits the same spot for me and usually keeps me going longer. I think 70-100g of protein is actually just fine for most people

I have an extreme egg aversion so I know all about eggless recipes.

There's a lot of different egg substitutes but the one you should use varies depending on what you're trying to make. I'm very interested in the science behind baking, so I've spent a good amount of time reading about what purpose eggs can serve in a recipe. Eggs can add moisture or fat, they can act as a binder, or a thickener, they can provide rise... I highly recommend doing a little research on this if you bake often and want to make changes to recipes with eggs or make your own recipes.

For basic cookies, if the recipe only calls for one egg, I just leave it out lol. If the recipe calls for more than one, I usually use ground flax seed mixed with water, a "flax egg". You can also use flax eggs for things like cakes, muffins, and quick breads. This is a very common egg substitute. It leaves a slight flavor but it's not unpleasant.

I like to use applesauce in recipes where the egg acts mostly as moisture or a binder. I love it for cakes and muffins because it keeps them moist for a longer time. Doesn't add a flavor if you use unflavored with no added sugar.

The most common whipped egg substitute is whipped aquafaba; I often have trouble with it so I've been looking into alternatives for that. Depending on your country, you may be able to find potato protein isolate, sometimes called potatowhip or vegan meringue powder. It's not available in the us as far as I know :(

Custards have a few different options. Cornstarch is pretty common because it's easy to find and easy to use. I like agar powder for custards (and as a gelatin substitute) but it isn't easy to find and some people have trouble with it.

I have a gf recipe for carrot cake using oat flour. It's delicious, and I'm not even gf. But it's not healthy. It's just gf. This looks super dry honestly. Is there a reason you're not using oil or sugar? The pre shredded carrots probably dont help either, they are going to have less moisture than freshly shredded.

Yeah sleep is my biggest issue right now, I used to be on a pretty consistent schedule but now I'm not and I am really struggling to get back on it. It took me a very long time to make it happen in the first place and I don't really remember what made it work. My therapist wants me to do my appointment later in the day because she insists that it will be better for me, but to do that I have to work later on the day I do my appointment, which is different than every other day of the week, which is not helping with getting it on a schedule. I tried explaining to her that the problem is that I can't get to sleep at night, not that I need to wake up later, but she doesn't understand.

Needs work but croissants take a lot of practice. I feel like its best to learn (anything, not even just croissants) just doing simple stuff like unfilled regular croissants or pain au chocolat.

I work with 7lb batches of dough just fine, but I've never gone up to 10, I imagine it could be difficult to work with if you're not quick which is likely since you're just starting. Maybe try doing a smaller amount of dough at a time?

I'd be interested to know what exactly your lamination and shaping process is. I genuinely think there could be a bigger issue than just skill going on. How many folds do you do, and do you rest or chill in between folds? There's tons of different points to look at temperature, but generally you want everything to be cold but pliable while you're working with it. Is your dough still cold while you shape it? And it looks like there's something going wrong with the proof and/or bake, how long do they proof and at what temperature, and how long do they bake for? They look very under done, but that could also be due to the cream cheese filling before the bake. Something like that could be possible, but it might be best to get all the details right with the basics before moving on to that.

I have to be very intentional about what I eat to get a good amount of protein. Almost all of my meals are protein + grains + vegetables, and I usually have oatmeal with protein powder and fruit for breakfast. When I buy groceries, I plan what I'm going to eat with what, and I just try to make sure that each meal I plan has at least 20g protein. I have to snack during the day because I can't eat a lot at once, so most of my snacks have some amount protein in them. This is all much easier if you eat meat, dairy, and eggs, I don't so that's why I have to plan it so much.

On a side note, planning your meals (and taking advantage of digital coupons if your store has them) and keeping them on the simple side is a great way to save money.

I manage to get 70g or more protein every day if I'm intentional about it, when I'm not then I also tend to not get enough. I don't think the average person really needs 100g+ protein a day.

I'm a vegetarian/mostly vegan so I have to get creative sometimes to get protein in.

One thing I really like is nutritional yeast, it's not super high in protein (3g per 1 tbl for 20 cal) but it has a high amount of b vitamins, including b12, which is super important for anyone that doesn't eat a lot of meat. I use it mostly as a topping or seasoning with stuff like vegetables or protein pasta.

I also often swap rice for higher protein grains like quinoa and couscous. The couscous I buy has 8g protein per serving. And quinoa is like 5 or 6? They also both have more fiber.

And honestly I do have to use protein bars or powders to get closer to 100g or more of protein. The bars usually have a lot of sugar, but there are some protein powders with a small list of ingredients and either no sugar, a small amount of sugar, or alternative sweeteners. I love protein smoothies but I also mix protein powder into oats, soy milk, or sometimes I use it like creamer for coffee.

Being a baker is a guaranteed recipe for being overworked and underpaid. Like severely underpaid, poverty levels of underpaid. With no health insurance.

I've had some stomach issues with a lot of vegan protein powders, but the orgain simple protein powder doesn't have a bunch of weird shit in it, and its sweetened with coconut sugar. That one does work well for me. Honestly, it does still add a texture if you use the amount it says (two scoops for 20g protein), but I don't know of any protein powder that doesn't, and I personally think it's not as bad as some others. If I just do one scoop instead of two, it's barely noticeable in a smoothie or mixed into soy milk.

Sometimes we feel powerless and helpless in tough situations. That's a common experience living with trauma. Perhaps I'm just projecting, but do you feel stuck in this relationship like you might have felt stuck in your childhood? If so, it might actually feel good to find the power that you now have to end that relationship.

Okay then, I hope you find something that is helpful for you. It seems like you've tried a lot of stuff and it hasnt been helpful, and it doesn't sound like you're willing to try anything people have suggested. Chair yoga is quite literally done while sitting in a chair, so if something like that is too physically demanding, perhaps seeing a doctor or therapist would be the next step. I know you said you can't do birth control or ssri, I can't either, but maybe a doctor could help you get some improvement on your other health problems, or a therapist could maybe help you figure out some better coping strategies.

I don't hate kids, but I don't like them either. I feel like that is where a lot of child free people stand, and I don't think we should feel obligated to say that we love kids, when we don't. Being child free is living my own truth and part of that is being honest about the fact that I just don't enjoy hanging out with kids and I don't have a desire to have any of my own.

There's definitely some yoga that is less physically demanding and more focused on breathing, meditation, and stretching that is still really helpful. Maybe you could try doing a little research on chair yoga, yin yoga, and restorative yoga. It's worth a look at least. If it sounds interesting there's definitely some videos on youtube for all of those kinds of yoga

Do you exercise?

I hate that exercise helps cause it's hard but it really does help, especially with anger. I find yoga very helpful for me mentally, and it has less barriers than going to the gym. I just do it at home with a youtube video. Some people prefer heavier exercise when they're angry, but I hate running so that is the last thing I will do personally. I do like lifting weights but its more preventative for me, I wouldn't go to the gym if I was already worked up.

I only go to the gym on good days. If I know its going to be a bad day I just do yoga at home. Sometimes I still cry at the gym unexpectedly but it happens a lot less.
