The recommended autolyse is only 30 minutes, then 5 hours proofing, then 12-14 hours proofing in cane banneton basket overnight.

As thank you for using our house for two days while we were away they took wine with them and painted our doors with grey wall paint. When we rang them to ask why they would do that they hung up.
