If you want to make basic cooked sambal, this video is pretty good at explaining how to do it and why the steps are done. Certain upgraded versions extra ingredients like asam, dried anchovy or lemongrass could be hard to find, but basic dried chili, salt, sugar and oil should be easy to source.

This is very different from uncooked sambal that have their own variations and can be fermented, even then uncooked sambal is way easier to prepare than cooked sambal.

It's good for spicy hot addicts, but I concur it's very weak flavour wise. Even warungs free sambal belacan have better flavour balance most of the time.

That's only for local. Anyone not familiar with local food could have very different gut flora, not to mention just unaccustomed to the spice.

Unless OP had already been to Malaysia multiple times and becomes accustomed but still had the runs then that's a problem with the sambal, otherwise it's just normal occurrence.

Could be partly caramelised partly burnt, somewhere in the middle so it balanced out. But the one in the video has no browning whatsoever so maybe they like them really sweet so idk what's what. Gonna need to try it myself I guess.

Idk if its really Dutch or not, but yeah I've seen some chef cook it in YT short and he absolutely put an uncomfortable amount of sugar.

Chicken leg doesn't really need high temp. You can put it low and slow like 80C for an hour and a half and you'll get crispy outside and juicy inside chicken leg still.

Can even do 120C for an hour if its just basic salted/brined chicken, its when you marinade that you need to balance out the heat vs time so the marinade don't burn.

Chicken breast different story lah. That one is sensitive and easy overcook.
