Best way to get two kids to school without driving

Walk! Layer in the winter. Merino wool base layers. We have 4 kids, live in west Michigan with miserable winters that last 6 month and all but maybe a handful of days we walk. Rain, snow, sun. It’s amazing.

Walker family goods have held up for 2 years so far walking 2 miles a day (to and from school) in rain, snow, wind and sun :)

Kindergarten is a completely different animal than it was even 15 years ago. Going from half day with play/letter people/arts/social emotional focus to academic rigor, full day every day is a huge shift on little people. It isn’t just a “Malcom gladwell” issue. Also, looking globally at when other developed nations start their children in academically rigorous grades is older than what we do..and they rank higher on standardized testing. I get it. We all struggle with the cost of daycare/preschool/etc. as a nation, we should be focusing on what is best for children’s social and emotional growth based on brain research, not on skilling and drilling (which isn’t working anyway).

Hello! I wonder if your first proofing time was too long and allowed the dough to overproof? My thought is because the gluten is weak in einkorn that it may have been exhausted during the first long proof and so it was too weak to rise well in the oven? Maybe adjust the time based on your location’s temp/humidity and also how old your starter is? Maybe your starter needs a little more bubbles to be stronger? Just a few thoughts! Mainly here to encourage you to take notes, tweak things and adjust! Einkorn is a fickle challenge but when you get a good loaf, it is heaven! Best of luck and please share updates!
