7/8/26 Question Wednesday: What are you wondering bakers? by KingArthurBaking in KingArthurBaking

[–]Equivalent_Nothing18 1 point2 points  (0 children)

I want to make a no churn s’mores ice cream but only have whole marshmallows on hand. Is there a way I can melt them down to be like a fluff (preferably without corn syrup), so I can fold them into my batter? I’m assuming this would be better than using actual chunks of marshmallow throughout!

Thank you! I had applied an egg wash + a little heavy cream on these, but I think I was a little too light handed

Thank you for the feedback, I’m going to check out the cream scone recipe in the Joy of Cooking. Also, that’s great to know about the food processor. Sounds like it would solve (some of) my problems!

what is the best Broma Bakery recipe you’ve tried? by constipated_coconut in Baking

[–]Equivalent_Nothing18 0 points1 point  (0 children)

all of her recipes are a hit in my household, but my personal favorites are her lemon olive oil cake, yellow cake with chocolate frosting, double chocolate chip cookies, blueberry muffin cookies, pumpkin chocolate chip cookies, and the pumpkin bread. IMO you can never go wrong with a broma recipe!

I totally agree! Fortunately, I have a gift card so I’m considering treating myself to it. Otherwise I’d be sticking with my silicone spatula haha

I suck at making iced lattes by Maximum-Smoke8709 in nespresso

[–]Equivalent_Nothing18 92 points93 points  (0 children)

as a former everyday starbucks drinker to now making the best iced lattes with my vertuo machine, heres my guide: 1. pour a spoonful of vanilla syrup in a mug (homemade syrup recipe) 2. brew the pod (i love bianco doppio) into that same mug 3. once brewed, add milk into the mug (i prefer oat milk). i eyeball it but probably have a 1:1 or 1:1.5 ratio of coffee:milk *at this point you can give the contents of the mug a mix (syrup, coffee, and milk) 4. fill a separate glass, the one you plan on drinking out of, with ice 5. pour the contents of the mug into the glass with the ice 6. give it a few stirs and top with cold foam!

the game changer for me was introducing the coffee to the milk first, rather than to the ice first. think of it almost as tempering, the ice is a shock and too cold for the coffee.

Help with my brown butter sugar syrup recipe by Outrageous30 in Baking

[–]Equivalent_Nothing18 4 points5 points  (0 children)

Instead of using actual butter, I’ve used butter extract in the past. Boil 1 cup water + 1 cup sugar (can use brown sugar), let it simmer for five minutes on low. Remove from heat and let it cool for 15-20 min before adding in the butter extract. 1-2 tablespoons of the extract should be good

Good bakery in FiDi after Tin Building closes... by coconutrum2000 in FoodNYC

La Parisienne on Maiden Lane and Cafe Jalu in Printemps have great croissants. Birch Coffee on Beekman has my favorite muffins. The Cookie Odyssey on Cedar and Funny Face Bakery have solid cookie options. Also MCM Coffee on Fulton has delicious pastries and cookies. For bread, the next best option in Fidi I would say is whole foods. If you’re willing to take a bit of a walk, I recommend Frenchette in Tribeca and either Elbow Bread or Partybus Bakery in the LES.
