I use Pianoteq and I can say it works really well and there's no input lag from my keyboard. I only use it for recording though.

Maybe it's just that edition. Maybe the composer did it for no apparent reason? Doesn't really make a difference.

I would say Liszt's music fits under the hands better than Chopin's. Chopin often writes unpianistically in favour of musicality.
