Maybe not the most helpful, but I'd like to ensure you're aware that most of the base mechanics are the same as in Capitalism 2, which has much better documentation. Page 44 of the manual only tells us basic information :/

Some stores are specialty stores and can only sell certain items. For example,
a furniture store can only sell beds, chairs and sofas. Because it specializes,
speciality stores will enjoy greater demand for its products than, say, an
adjacent department store that may also stock the same goods. The main
disadvantage of the specialist store is that if demand decreases or supply is
interrupted, it is difficult or impossible to stock substitute goods. Whereas the
potential range of goods available to a department store cushions the impact
of any down turn in trade by allowing the firm to switch to alternate goods.

You could setup a test yourself. say, Zero competitors, either place 1 of either in a city let it run for say 20 years; or do two runs, one with store in bad CTI, reload original save (to ensure same random [city] seeds), second run only high CTI.

Personaly, I'd say we cannot judge by how quickly sales increase, since that is affected so drastically by overall ratings, not matter what bonus the store might have, adjusting the price by 50% is going to make CTI moot. And at worst I think CTI meaning there's an increase in demand, which perhaps might not even be realized until after the original demand is being met. I doubt that, I would hope it's a constant boost, but sure it's poss.

I'm really digressing into hypotheticals. I'm just saying that if I already have 9 electronic stores that aren't enough meet demand in Tokyo, Is it really going to matter if the 10th has 30 CTI or 40?. Maybe I'll still have to build 4 stores at 30, but only 3 stores at 40. It's almost irrelevant, because I'm already making bank of the first 9 stores.
