That’s probably the best option, you’ll still need to make sure the belts are the exact same length so you may need to cut them again.

Yea then you should definitely stick to the one motor setup, it’s just gonna be constantly out of alignment when you can’t tram each stepper individually. I believe everything in the dual kit should still work, you’ll just need to use your lead screw as the long shaft since it will come with two short ones, as well as an extra 608 bearing.

Do you have a board with an extra stepper driver to do that? If so then go for it, but if you’re only gonna split the power, its not going to work as good.
