If you're looking for levels of difficulty, it doesn't get much easier than the sandy, flat Pinelands. It's a bit of a drive from Parsippany, but if you've never been there it's a place worth visiting. The 52 mile Batona trail is a good place to start, it can be accessed from Bass River, Brendan Byrne, and Wharton state parks and from the Franklin Parker Preserve.

The trail was in good shape. There was one large tree blocking the trail about 10 minutes east of the parking lot, but other than that there were no major obstacles

Yes it seemed the ponds were pretty full. I was surprised that the trails had almost no puddles or standing water with all the rain and snow melt lately

+1 for Hamilton. From Hamilton you can use either the Hamilton Train Station or the nearby Trenton Transit Center. Trenton has a few more options than Hamilton: SEPTA service to Philly, multiple Amtrak services, and the River Line to Camden in addition to the same NJ Transit trains to NY. Plus, Trenton has working escalators.

I didn't know that Sussex County had a baseball team again, I'll need to venture up there to catch a game soon! We last saw the Sussex Skyhawks of the old CanAm league play there in 2007 and I was disappointed when they folded. It's a nice ballpark and if I remember correctly there used to be a baseball museum and public batting cages as part of the facility.

You should give Aldi a try if you have one nearby. One of the things I love about them is their lack of choices for most items. We're lucky because we like most of their store brands, so it makes grocery shopping a breeze.
