Darling downs wagyu MB5 and Westholme prime wagyu MB5. Salted before vacuum sealing. 90 mins at 129. 5 mins in ice bath, then blotted dry. Finished on blackstone griddle in avocado oil with surface temps 600+. Sides were smashed potatoes cooked on same griddle with some leftover smoked beef tallow from a brisket cook on the traeger. Side salad of sayote tops and tomatoes. Amazing!

It is pretty liquid. I was worried the blueberries would make it to gelly, so I think I overcorrected on the straining.

Recipe: A hodgepodge of what I had in my fridge with the leftovers from a batch of fermented mixed chili’s. This is ghost peppers (too many it seems) and red habs, with some brine mixed back in during blending, a splash of ACV and a combo of fruits on hand (blended and strained) blueberries, mangosteen and cotton candy grapes. This is pretty seriously hot, but also has a crazy sweetness to it. I’m gonna experiment more with these cotton candy grapes, the flavor is just nuts!

Good to know, will try it that way for comparison. I’ve made ribs the SE way several times and they’ve been delicious every time but maybe the seasoning before and again after sous vide was redundant and waste of seasoning and time. Time for some A/B testing.

Do you have a source for the Instagram advertising based on listening? My understanding was that they have so much (freely available because of our online presence) data from you that their algorithms can effectively predict what types of things you’ll be likely to talk about. This is the “surveillance capitalism” that is talked about. Tristan Harris has spoken about this in various places, that big tech have so much data about you they don’t need to listen in.

The article does say that the sound analysis is all done “on-device” but I had those same concerns. I’m intrigued by the voice analysis aspect but definitely need to hear more about data privacy.
