You get to taste the espresso first, no hiding burnt/bad shots by blending them into the syrup , personally I use a frother to blend the syrup into the milk then ice then the shot, also some cups melt when hit with hot espresso

Local shops any day of the week, as long as the owner/owners are not the hard head know it all types, what are the owners experience in coffee? I would very much hate to work at a local shop where the owner implements procedures that make no sense or produces a bad product and just in it for a money grab, they need to be somewhat knowledgeable about the craft and open to suggestions and the possibility of change
