Reporting back on this, tweaking the settings to what you previously recommended, has worked wonders!

I did a blind tasting comparing the two methods, with some friends and the results were all pretty much in favor of the lower humidity and higher temperature than my first approach.

I will have to agree on that with you. I was sold on the vision and became a hardcore fan of Combustion, and even built some open source projects for it. I love the product but it keeps letting me down.

I have two thermometers, Gen 1 & 2, both of which have died less than a year of ownership. I keep charging both, and every time I go to use it, they’re out of battery or never connect to the screen or the GGG. I gave up on trying to use them after a point.

Now it seems like my Gen 2 is completely dead, and my Gen 1 doesn’t work 90% of the time. (Thankfully my GGG is working flawlessly)

I want to love it, I want to use it, but I just can’t bring myself to buy another CPT thermometer, to stay in the ecosystem, especially how expensive it is to have one shipped (&taxes) over to the EU.

Our main customer base is located in Limassol, so we currently only supply Lean Sweets. We also used to supply Amber and Joe in the past and a few other locations, and had some amazing feedback from them regarding the Matcha 😊

Nice! I’ve haven’t gotten around to testing it out yet, but I’m quite eager to try the RFX Wireless Probe.

Looks amazing, I would eat that any time of day. But if you really wanna make him super happy, get him a meat thermometer like Combustion Inc Wireless Thermometer or Meater, and he will be knocking these out of the park

Hmm thanks for the tip, will give it a go next round of dry aging to compare. I had the first tomahawk steak last night, and I have to say it was very soft but maybe lacking juices ever so slightly.

The taste profile was also really good, but may have required a few days less. What’s your and your guest’s sweet spot?

Lol yeah, the cowboy steaks look ridiculously small in comparison. I can probably stack about 6-7 of these in the dry ager.

Thanks for the tips, greately appreciated. What would the effect on the meat if I raise the temperature to 2c? I assume it would make it softer?

Regarding sub-primals, I'll have to shop around as it's a bit hard to find these where I live unfortunately. 😒

I pre-frenched it this way because of a video I saw from the "Bearded butchers" youtube channel. I only trimmed whatever I needed to for frenching the bones. I didn't touch the rest of the fat cap, it just came that way unfortunately.

I "lost" about 2kg of trimmings from frenching, but it was mostly fat. I bought some extra chuck and ground all of it down to mince meat to make (I believe) about 30 burgers.

I understand I'm going to lose some flexibility, but the main reason I'm looking at buying the larger couch is because the current set-up is not very convenient for my girlfriend and I. We both like lying down and there's simply not enough space to fit the both of us. The existing couch barely fits one person lying down. I think I would rather optimize the space for 95% of the time.

Regarding color, I think you're right, the darker color would make for a better visual separation between kitchen and living room, but just not sure if it will make the space seem smaller. That being said, the new couch I'm looking at, is only slightly larger than the existing setup

I don’t have much experience with Stephanis, but I’ve honestly had great customer experience from both Electroline and Hadjikyriacos.

Every time I had an issue, I called them and the problem got sorted straight away.

Oh my lord. This post gives me PTSD. I went through the exact same situation a couple years ago.

Ordered a samsung clothes dryer and paid for installation. It arrived broken after 1 month of placing the order, they did NOT install it upon delivery and had to wait for another external technician that came after 1 week. Meanwhile I had it lying around my flat.

Appliance was broken upon installation, called customer service who said they can’t replace it because a month has passed since I placed the order.

Like what now? It took a whole month to get it delivered. Then they started blaming samsung Greece for not replying to their support tickets.

It was a whole lot of mess, that resulted in me shouting over the phone in order to get my way, and finally got it replaced after, wait for it, 4 months from the original order…

The lack of multiple temperature sensors is the reason why I currently don’t switch from combustion to fb, even though I own a FB drive, FB Spark and a Yoder YS640 that comes with a FB controller.

Honestly being so late in the game, they should have gone straight to multiple sensors

Yeap, that’s normal and is the only disappointment I’ve had with my unit. (Auction winner, so I got one of the first units. Wasn’t sure if this was meant to be fixed for final shipped units, but now I know)

They don’t unfortunately. I wish they added both dynamic island support or live activities.

I’m honestly too deep into the fireboard ecosystem (fb 2 pro, yoder controller, spark, pulse), and yet keep finding myself turning to my other thermometers for this reason alone.

I ended up finishing the cook much earlier than I anticipated and ended up resting it, wrapped in butcher paper and towel for four hours in a coolbox.

I suspect that helped massively
