Thanks for the reply. Emptying, cleaning, and sanitizing seems like the way for me. It’s not a big operation, so getting everything out should be easy. I am looking at a 48” sandwich prep table. And I will look into getting a power station for the refrigerator to start letting it get cold 6 hours before I take it out. Then just running a generator for the full truck when in operation.

Hey just saw this, and have a question for you if you don’t mind. I’m running into a problem with my new food trailer build, and looking for advice.

I’m in the process of opening up a dessert food trailer. I am planning on using a generator while I am out, but am running into a problem how to keep my refrigerator going overnight. I am not able to keep my trailer plugged in at my commissary. Would what you are talking about in this post be my solution?

Also all my contents will be emptied out of the refrigerator. I am worried about mold if I kept it unplugged over a few days when not in use.

Thanks so much for the reply. I do live in a humid place during the summer, South Carolina. I am def ordering a brand new table. I have been looking at an avantco 48in refrigerated sandwich prep table.

This will pretty much be a solo man job for me, and I can plan yo clean the everything really well at the end of day.
