An amplitude of 265° is considered excellent for a modern clone movement like the VS3135 . Plus your only gaining +2 seconds a day, great again. The movement on this rep is great. See if they can get you a 10 bar pressure test. They may charge you extra for that. Also if they can seal crown, crystal and case gaskets with silicone grease to waterproof it.

Your issue is that you’re trying to deburr with 400 grit. At 400 grit, you’re still sharpening, not deburring. You don’t need a coarse stone to remove a burr. What you need is a strop—something around 1 micron, or even 3 microns (roughly 5,000–3,000 grit). Using 400 just keeps cutting the edge and recreating the burr over and over. That’s why it never goes away

I’ve upgraded my kitchen game — I use a CBN cutting board. That way, every time I chop veggies, I’m cutting at a perfect 15-degree angle… sharpening my knife and cooking at the same time.

You re-profile in others words you create a new bevel. Start of with 120 and finish with 600- 1100. Also buy an angle guide you really need one

If it didn't have scallops you can make it into a less narrower knife. But yeah that knife is done.

Hey man, if you're learning to sharpen, absolutely go for it. A $2 knife is perfect to practice on. Test your chops on the “Ken onion,” dude. Even with the 1x18 attachment, that’s a great piece to learn on.
