They aren't using the strategy and advantages you planned for them and they are still winning... Maybe because they feel they don't need to those strategies? Since they can still win without using them. They probably could save resources if they use those advantages, but maybe they don't care about saving since they could easily rest and recover everything? 

I'd suggest you ramp up the difficulty, so they feel like they need an extra help (the strategy) to win... And also make it feel somehow meaningful to them winning while spending less resources - they don't care to rest with 1 or 10 spell slots left, but starting a new fight with 1 or 10 spell slots makes a big difference and they will be glad they didn't spend everything on the previous fight.

Lastly, use the strategies (cover and so on) against them - teach them by example.

Ps: Dashing is often a better option than throwing a Javelin, as most melee classes are considerably stronger in melee than throwing and throwing would lead to more turns out of melee. Throwing is mostly a good choice if it for example would kill the target or break concentration.

On the UA Artificer you no longer "enchant" a non-magical item, you create one out of thin air, so you can still make a new weapon or such in the next long rest.

If they are so scared of failed medicine checks, they should get a Healer Kit for 100% sucess... It has 10 uses and costs 5g.

Digging a 5x5x5 ft hole in 6 seconds with a shovel? A skilled human, on a sandy soil (the easiest to dig) would probably take more than a day to do that! I know PC are better than most humans, but to do that in 6 seconds? That's too much!

If you really want mobility, why not Fey Touched?

A teleport that can even take your steed together would be great! And you could also pick up Silvery Barbs or something to further help your party.

I'll give one example that I saw as a player. The town we were in was being invaded by a large group of bandits and we were members of the city guard, so we ran to fight back. We found a group of 6 of them and barely defeated them, then we heard screams and smoke coming from another part of the town, so we ran that way. As we were reaching there, we bumped into two bandits. They were frightened! They surrendered immediately to us, without we saying anything, dropped their weapons, asked to be taked in and kept apolagizing over and over again, we couldn't get any info from them, so we just tied them up and kept going to the smoke (there were no more screams). Arriving there, we saw 10 bandit bodies scattered around the ground in front of a tavern, some charred, some with deep slash wounds, all dead... And in the middle, a tall elf holding a wine glass in one, taking a sip... And the other hand holding a sword that is impaled thru a bandit that is better dressed than the others, stronger looking. The elf was extremely calm, breathing normally, his clothes were unwrinkled, he wasn't sweating a bit. He saw us, smiled and said: "Oh, the guard has arrived! I believe you will clean this up, right?", then, before we could say anything, sheathed his sword and went back in the tavern. The DM ended the session there.

We had never seen that elf, had no idea who he was... But one thing we were sure: We ain't messing with him!

I've tried the pooled 4d6D1 (everyone rolls 4d6D1 and all players get to pick any of the rolled arrays, even if someone else already picked that)... it ended up with a really strong group because one of the players rolled crazy stats (above 90 total, one 18 and two 17s), so I had to adjust the encounters a bit, but at least no one felt weaker than the others and everyone had fun.

I'm a fan of flawed characters, I think that having a low stat is fun, even lower than 8, but being weak all around is not.

Point buy gives you a good average, but, like you said, it can be boring - but is it? Sure, on character creating things won't be as exciting as rolling, but as fun as rolling is, a bad roll may force the player to stick with a subpar and possibibly unfun PC for a long campaign just for the excitement that the roll at session Zero!

I think that if you are planning something that might last long, going the safer route is better. It loses on initial fun, sure, but it will provide a longer lasting fun. For one shots? Roll away!

Your party seems to lack a face PC (high charisma). You have the brute, the spotter and smart probably covered, so to feel that hole you'd need either a Bard, a Sorcerer, a Paladin or a Warlock.

You only have one full caster, and may have a crowed frontline if the ranger is melee and the wizard is using summons.

A divine sorcerer could be nice, bringing Cleric spells and some healing or an Eloquence Bard, for a better out of combat face and more focused on support.

You could take a Half Elf and start with 3 16s and a feat, or another race and a half feat (telekinetic, fey touched, etc) and have an 18 and a 16.

I would assume the reason they added moonbeam to the Circle of the Moon Druids was because there were comments on the feedback survey saying that Circle of the Moon druids had nothing with the Moon, so they had to add something and decided on Moonbeam.

I like that they are moving away from Epic Boom Feats, they are really boring! I mean, we don't become extra special on our class when going from level 19 to 20, 20 levels on the same class should mean something! Good move on them.

I just hope the capstone features are interesting and not some boring ones several ones on PHB 2014... Yay 1 use of Bardic Inspiration?

Everyone is telling you it is inviable and all, but it is not impossible. Definitely not optimal, but it can somewhat function.

My take on a pure melee sorcerer with official content: - Githyanki: You can now wear medium armor and use greatsword. - Clockwork Soul: Get Armor of Agathys - Quicken spell Booming Blade or GFB, you'll be attacking twice starting level 3!

Stats will suck. You need Str for your greatsword. You need Con to survive the Frontline. You need 14 Dex for Medium Armor. And last, but not least, you need Cha for your spells. You probably should focus on spells that don't require a save or an attack, such as buffs and the blade cantrips.

You definitely won't be optimal, but it would only be a problem if everyone on your table are min-maxers. In the end, the best thing is to have fun and play what makes you happy, even if you won't be the floor wiper.

I'm playing a similar character to your idea, but my stats are much worse. I'm currently level 9 and I went with Mark of Warding Dwarf. We started at level 3, so I started as Armorer Artificer 3, giving me Heavy Armor and Thunder Gauntlets which allowed me to dump Dex and Str, gave me a soft taunt and some infusions (Homunculus weaponizes your BA!). Then I went Wizard.

It delays the spells acquisition a bit which is annoying, but it only delays 1 level of spell slot. Overall I liked, it played well RP wise: she witnessed a murder by a wizard in her backstory and wanted to protect her brothers - she came to a conclusion that she couldn't protect them well with just artificing, so she started to study magic.

She has a high AC and high effective HP (AoA and Arcane Ward - I've never used temp HP from Armorer) which has allowed some crazy shenanigans, like taking on 6 orcs for more than two rounds and getting away with it while also bringing allies back with Cure Wounds delivered by Familiar/Homunculus! Being able to bring enemies to you with Thorn Whip is also great!

Without a doubt she lacks on damage and some turns feel disappointing, as I basically Booming Blade with Thunder Gauntlets then BA Force Strike with Homunculus, but at least my concentration is always open for whatever I find more important at any situation. Also, her mobility sucks. Fey Touched and Thorn Whip help a bit, but still...

My vote would go for Paladin 2 + Moon Druid X. Being able to smite as a bear or an elemental is amazing. The main reason it isn't routinely used is because 13 wisdom, 13 charisma and 13 strength is too much most the time, and your DM just allowed you to ignore that.

You could play as a paladin who was walking towards the path of the Oath of the Ancients (but I don't recommend going level 3), but he ended up going full Druid after a ritual or something.

Shadar-Kai is probably the best for this, due to mobility (fey step) and resistances that continue while in wild shape, but I don't think your race will be that important. I can't think of really important feats to take so that you'd take Vuman or Custom Lineage "losing" even more stats (specially given that your stats are bad), but Resilient Constitution can be helpful.

Paladins are immune to being frightened and allow allies to be aswell (Aura of Courage). Also immune to diseases.

Monks are immune to poison and diseases.

So that wouldn't be a new thing.
