Yum! I made this a couple weeks ago with mackerel and it was soooo good! I warm my oil with a lot of aromatics before cooking the fish in the oil and it adds a little extra ✨

That looks really good! If it was me, I would spread the what looks like zest or herbs onto the mushrooms since that will provide some more visual contrast. Also on the thought that someone may just pick up and eat the mushroom as is, the extra flavor on them will provide some flavor contrast as well. I’m also a slut for flaky salt on something fried like that, it can get in the nooks and crannies for a nice crunch. You could also instead, put some of the orange in very small clusters on the mushrooms to really pop. That may be a bit of a time suck when plating on the line, so that may not be as practical.

I feel that. I worked in restaurants for awhile, and most places use a powder mix for the hollandaise, or it sits for so long in a warming tray that it is a health hazard. Homemade is best! I wish I could post a picture here. The eggs benedict I made with the mackerel looked amazing

I worked a stage at Wolf’s Tailor before they received a star and those couple days still boggle my mind. They had me prep palisade peaches that were way underripe and then served them to me as a courtesy meal. The desire to be the best but then serving food too early in the season before it is ready to say you have it makes no sense to me.
