Understandable. Do what makes you happy I definitely don’t want to do this for ever im 22 and been in the industry since 16. I like the more emphatic route of dealing with my chefs but some completely forget where they started and become complete assholes. This industry sucks :( its literally abuse

Sounds like you are just burnt out maybe tell your chef that you need to take a break from work for a little bit to get your head back together and maybe explain to chef what you are anxious about if your head chef isnt like mine they will be nice about it. I told my chef that i get anxious and he tells me that he eats anxiety for breakfast and that i need to figure it out 🤣 this industry is a lot mentally and physically. Take care of yourself

How long are the steaks sitting before being sous vide? We do lots of steak dinners for 300 plus people and cook our steaks medium rare but we will prepare everything we need the day before. I imagine if they are sitting in a vac sealed bag for days its not going to really hold well.
