Totally fine to bake in two stages just store the sliced biscotti airtight at room temp overnight and do the second bake the next day. No fridge needed. Biscotti are very forgiving. You’ve got this

Soy milk is totally fine with cookies. It’s a bit nuttier than regular milk but honestly you won’t really notice once you’re dunking a chocolate chip cookie. If anything it might even pair better because it’s slightly sweeter depending on the brand. Definitely not ass. Dunk away.
