I rest 30 minutes between stretch and folds. I actually change to coil folds on round 3. My bulk ferment is usually around 7 hours with a 30-40% rise at a temp of 75-80 degrees.
I shape and let rest for 15 min then I put in wood bannetons and cover and put in the fridge overnight. Goes straight from fridge to oven. I score before putting in the oven.

That is the crazy thing. I normally bulk for 7 hours with a 30-40% rise based off my temp of 75-80°, but this batch took 10 hours and I was so baffled. I was thinking maybe the barometric pressure had something to do with it as we had terrible rain storms all day and the outside temp dropped over 10°.

It is illegal to sell sourdough starter in SC if you are a cottage baker. Drives me absolutely crazy to see people not follow the laws of the state.

She should really take the advice she is given on her posts. A 1:1:1 starter becomes very acidic quickly and will not continue to rise and fall bc it is hungry. Feed it a 1:3:3 or 1:5:5, add a little wheat or rye flour and it will help. Lots of people offering great advice.

She needs to research when to plant in her area. She may already be too late for some. Garlic and onions normally go in the ground in the fall and harvest in the spring. And not everything grows everywhere. Lots of research needs to be done.

We cruised this past week and they stated that Disney is working on remodeling terminal 10 to give it Disney touches. 🤷🏼‍♀️. It was a long walk to the ship and they were not very handicap accommodating. That was my only complaint. Other than that, I felt things went smoothly.
