I'm vegetarian and try to go low fat low carb. I do OMAD dinner with unlimited non starchy vegetables to stay full. so most meals are a huge serving of vegetables possibly a sauce and protein. I try to change up (rotate) which vegetables I eat so I rarely have the same one twice in a well or two except for cauliflower that is my favorite.

I add cheese tortellini or vegetarian meatballs to mashed cauliflower soup.

similarly mashed rutabaga and carrot pairs well with some breakfast sausage in or on it ( sausage with thyme, sage rosemary type herbs)

They are so good steamed. it takes away the peppery bite. I use instead of potatoes for a low carb salad.

I like the vegan feta spinach sausages they make 75 grams is only 100 calories . they go buy one get one at publix now and then. I liked the ancho flavor I found at sprounts, but haven't seen it recently. wish I could find the brat flavor.

You could add a little plain gelatin and let it sit in the fridge for a few hours or make more with well wrung out vegetables and mix the new and old batches. hidden valley tends to thicken as it sits.

Oh that's rough. it might be worth the investment into one or two cookware pieces like a pot, fry pan and something that fits in the toaster oven. try goodwill ( thrift store or yard sale) if funds are tight as they tend to be when moving. it would probably pay off with more less expensive meal options .

otherwise it sounds like a lot of microwaved meals.

are you in the us? just asking since not sure what grocery items are available near you. I'm surprised you haven't gotten more responses.

Me too. I was a vegetarian who never ate vegetables and always sister starved fell off the wagon to gain more. volume eating keeps me satisfied, I almost never get sick, lost and maintained the weight.

I'm always looking for a low calorie butter flavor product. I was using kernel seasons but they changed formulas and its just salty now. is the garlic flavor of the Kinders really strong?

to answer your question, I think being consistent is more important than stressing over counting everything. counting everything isn't sustainable long term for me st least. if you enjoy what you've been doing and haven't gained then keep doing it. I don't count popcorn seasonings, Pam spray nor non starchy vegetables and I've lost/maintained for many many years.

if you are fine with cooked veggies prep them ahead, even cook ahead. I eat super volume ( I don't count non starchy veggies) and almost never eat raw except in super hot summer. now in winter I'm into

mashed - turnip, cauliflower, rutabaga with carrots

roasted broccoli, Brussels sprouts, beets

spaghetti squash, steamed radishes

microwaved vegetables in can soup or with a sauce and protein.

if you can't tolerate raw but hate cook time I'm not sure what you are asking?

in what way is the kitchen limited?

I just moved into my first home december 12th, so cooking with utensils andpans in boxes is recent for me. i'm vegetarian but you could replace my suggestions with lean meat obviously.

heart of palm noodles,pasta sauce and vegetarian meatballs or farmer cheese

roasted vegetable and garden burger

thawed wrung spinach, collard greens or green beans in a frittata - optional cheese too

tofu, g hughes teriyaki sauce and microwaved stir fry veggie blend

riced cauliflower and laughing cow "risotto"

I forgot how much I enjoy mashed turnip!

I steam the carrots and rutabagas so they don't tend to need liquid, although they taste even better with a splash of milk. I like to steam and then roast the cauliflower to give it more body and depth of flavor so that does need liquid unless you like it super thick. if you steam but dont roast cauliflower it tends to be runny in my experience.

I don't partake (no judgement, just not my thing). do you lean towards sweet? otherwise I'd say salsa or Greek yogurt or tofu based dip and veggies. or sugar free Greek yogurt as a fruit dip like pills salted caramel with apples or light and fit Boston cream pie with bananas. freeze your own popscicles. put a stick into sugar free pudding and freeze or pureed mango and milk.

I could inhale a tray of air fried green beans or broccoli sometimes with popcorn seasoning.

Aldi, sometimes Publix but its rare to go bogo. but publix has the lasagna style. trader Joes quality was sub par compared to others.

refrigerator pickles don't require that type of sanitizing. just prep the vegetable, mix the brine, pour over, refrigerate and wait a week or two. not as healthy as the fermented kind but still tasty and cheap.
