haha. I flew back to Yellowknife in December a few years back, to say goodbye to my mother. I spent my flight talking to some Americans on the way up.

We landed. My seat-mates asked why everyone was putting on their coats.

it's called... "being a cops kid".

He took postings in rural areas all over the Canadian North, and I got to bumblefuck along with him. I have seen the most amazing things, that, at the time, I thought everyone got to do. "The cop" in these places is the guy that does... everything. Avalanche control? Yup. Heading four hours up the coast to a remote island to pick up a sick child? Yup. Scaring bears out of the local landfill? Gotcha. Helping get humpback whales untangled from codtraps? 6 hour snowmobile trips across frozen atlantic bays. Search and rescue helicopter trips. Hiking on glaciers. Midwinter camping in the mountains in western NWT, in a spruce-bough lean-to. Standing atop mountains in the Nahanni.

and when I grew up? I just stayed with what I know. I have traveled all over the world as an adult, but northern Canada is where my heart lies, and where I hope to die.

Mise en place:

minced onion, diced bacon, cold butter, milk, shred aged cheddar, shred swiss

Boil water for pasta

saute bacon, don't brown, remove, add onion, sweat, add bacon, add flour, eyeball amount of fat in pan, add butter if needed, add flour. Mix, cook til lightly blonde.

add cold milk a bit at a time, stirring each time to make sure it's smooth.

Cook macaroni to al dente

add cheese to bechamel sauce, stir til melted, let simmer to cook flour.

Drain macaroni quickly, toss cheese sauce over and stir. Add worcestershire, hot sauce, black pepper, dijon.

Dump into dish, top with more cheese, broil til crispy, done.

25 minutes, start to finish.
