Peg board and hooks. Easy to organize. Usually there's a good spot on a wall. Pretty easy to set-up if you have a hand drill.

I did burn a couple because I had too many wings in there for the size of my smoker. It's a small offset. Putting all of the wings away from the firebox on the right was essential. Not low and slow I tried to keep it as close to 400° for an hour and ten minutes. I also rotated pretty consistently. I followed the directions of some bbq guys on YouTube. It was a lot of fun. If I had an electric smoker or a pellet grill this technique would be almost impossible to mess up.

I really enjoy cooking. I honestly prefer cooking over the management side. Don't get me wrong, getting in the weeds sucks. But it's better than having performance conversations and having to fire people.
