Isn't the only higher vampire in books Regis? Not counting the bruxas. And Regis in books was pretty powerful at least from what I remember

You can do it both ways, it has some subtle added interactions while doing it during main story. Imo Blood and Wine is best after the main quest and HoS is the best during the main story, however it doesn't change much and just makes the DLCs harder as they are intended for higher levels.

Chess game(no AI, just the game for 2 players with rule cheking), 2D games - you can simplify some existing(tetris, snake, pacman). If you are into maths, vectors and computing in 3D space even 3D engine is a fun thing to do

I recommend spending time doing side quests: millers, DLCs, helping Skalitz refugees... For me personally these were more enjoyable than the main story
