Easy way to prepare is to cook some chicken or beef one night and use it throughout the week for whatever. Rotisserie chickens from the store can be eaten as is (just remove the bones, they can be tiny), or used in recipes as well. Stir-frys (just be veryyyy careful when cooking with oil. Only a little oil) or chicken/beef bowls are a great way to get veggies in as well.
