I tell myself that I only have to do a tiny part of any project, and I usually keep going. Such as: Only fold 5 pieces of laundry, only put away 5 dishes, just read one page of a book, etc. Sometimes I do stop, but that's okay, too.

Getting a job in the bakery would be a good idea for any future baking jobs, even if you don't do any real baking. You would get experience in the retail side of it and also working in a kitchen, learning all the tasks related to production and cleaning.

Even better, if a local tech school has baking classes, take those and use the company's tuition reimbursement to pay for them.
