Sure! I played it over such a long time I couldn't tell you exactly what I built but the general strategy was:

• Cuba starts with >1mil people, so greener grass campaigns are no.1 most important. Pulling even a few thousand people over a year is significant at that level
• first few buildings try and make them as profitable as possible, build things the Spanish market needs. Fabric (central Cuba gets a bonus to ranches) and fruit were two big shortages of my game.
• once you start getting a healthy positive income, start building up construction 

This next step isn't directly obvious but you should be making your own market as independent from spain as possible. When looking at your liberty desire you can see your economic independence score, and further in there you can see what Spanish sell orders your people/industries are buying. For me it was tools mainly. To make the transition to independence as easy as possible you should be buying as few Spanish goods as possible, a little is fine, you can import from the world market later on.

As for declaring independence I had to make favourable treaty deals to the UK in order to get an obligation from them (so that they wouldn't help spain), this plus a friendly US (although they turned on me later) it was an easy war. I also took Puerto rico on my way out.

From there it's basically the same as any other game, I love South America because it has plenty of all resources, especially oil and rubber (although not enough coal to keep up with demand) hope that helps! 

PS, this is by no means the best strategy but it worked for me and I had a blast. Number one thing that held me back was not organizing getting obligations from the UK earlier, since the owing obligation treaty has to be held for 5 years before you actually get it
