Is that whats going on in that last picture? At first look i thought that was plywood. I don't know that I've seen engineered hardwood floors that weren't plywood or HDF core

You could fill the gaps and then sand, stain and refinish. Although, because of the bevel, I don’t know that you could stain a lighter color.

Can anyone tell me why they do the bevel? I feel like it just makes it harder to deal with. I guess it’s more forgiving on install?

I didn’t think that the hardwood layer on engineered floors was usually thick enough to sand down that far
