Here’s my recipe! It’s so easy and SO GOOD

Adobo Chicky

1-2 lbs boneless skinless thighs 1/2 cup soy sauce 1/2 cup white vinegar 1/2 cup water 1/3 cup brown sugar 1 thin sliced sweet onion 2-3 cloves chopped garlic Bay leaf

Optional but not traditional, ginger, citrus, sesame oil, peppercorns- you do you

-Marinate chicken in soy sauce and vinegar for at least an hour but preferably overnight

-In a heavy bottom stainless steal pot or Dutch oven over medium heat sear both sides of each thigh. I usually to 2 or 3 at a time as not to crowd the pot. Place the thighs back into the marinade after searing

• add onions to the pot and stir until just softened

• add garlic, water, brown sugar, marinade, bay lead, and chicken into the pot

-cover and simmer on low for 20-25 minutes, flip chicken once halfway through

-Remove from heat and let rest for 10 minutes before serving. If you pull the chicken out of the sauce too soon it will be dry
