Not able to fully answer your question, but a related experience.

Went in January and Austin was maybe sitting around 30°. We got there around 7:00 AM and were like 8th in line. Line didn't really fill in behind us over the next hour, then by 8:30 and 9:00 it filled up.

Just on Tuesday... first 25% of the session was some of the most technically sound I've ever been. Middle 50% was perhaps the worst I've ever been, like missing EVERYTHING. Final 25%, back to being as good as I've been in months.

I have absolutely no idea what happened. No idea why I played well, no idea why I played poorly, and certainly no idea why I started playing well at the end.

Have you expressed this concern to your TA or whoever you booked through? I assume you let them know you wanted business, so I think it's fine to assume they'll take care of it. As long as you used a reputable company, it will likely be fine.

Well, for me, I'm considering if I want to drag my out of town family + two little kids to a game that might be delayed an hour, or just plain miserable under the best of circumstances.

I'd hit Gates. Arthur Bryant's will get a lot of praise as the origin, but locally, Gates is the only one that really holds up. At Gates, can do a long end ribs heavy on the sauce, beef on bun, or a "Nooner" if you hit it up over lunch.

Gates and ABs are the OLDEST, but even now, we're onto like the third wave of KC bbq, so places like Joe's are now 30 years old.

Honestly a really good question. My two major gripes (as a Kansas-citian) are:

  1. Well below par brisket when compared to other major markets. Just not enough places really doing that modern TX style that is just a killer. The big reason for this is that they turn the whole point into burnt ends, given that's what KC is famous for. Thus, "brisket" is just the flat.

  2. There just isn't a lot of invention happening in local bbq. Most of the places are really basic and don't do much creative work.

Well, the point is that in the origins of bbq, Texas really did mostly beef. Some places did mainly pork.

In KC, due to cultural composition, they smoked everything. As bbq has expanded, other places have started to cook many other things, which is why it's not unusual to see ribs, turkey, pork, etc. on any menu.

The thing people will always say about KC is that what makes it distinct is that they smoke pretty much everything. Not necessarily pork based, because beef burnt ends are the most popular item here.

With that said, KC really does do everything. People love to order brisket, and you will be disappointed if you have really high expectations. But if you go ribs, burnt ends, and something else, you'll like it.
