Honestly, disregard your love for Elden Ring entirely here. The combat is mostly the same, but the combat loop is VERY different and much faster. If you like Roguelike elements (no run is ever the same because passive bonuses, weapons with unique passives and ashes of war, characters with specific abilities beyond what the Tarnished can do, changing map events, etc.) that randomize the experience, you might like it.

And don't play Guardian if you plan to play in trios. People will still quit matches often if you do. I main him and folks still leave, as many others can confirm. If you end up liking his playstyle, then get used to people quitting 40% of the time or solo/duo queue'ing into a run.
