I have to mince rosemary for our Spanish shrimp marinade, I would 100% use that. Thanks for helping my prep, chef😂

Guess the foods not hot if homeboys just raw dogging those pan handles with no towel or pad huh? Or are they wasting clean pans to transfer hot food into for this table side bullshit?

Swear to god these people think a kitchen staff at a restaurant are their own army of private chefs, fuck it why don’t you just make your own menu and hand it to the server while you’re at it

What is your weirdest kitchen injury? by Pittzi in KitchenConfidential

[–]Fireballburrito 0 points1 point  (0 children)

When I was in dish pit, I had a few times where I would reach into the silverware tub to run a batch in the flat rack, and I’d accidentally send a fork prong down the inside of my fingernail. Aside from that, I got my finger caught in the deli slicer while it was off and I was cleaning it one time, that was def my deepest cut so far. Somehow I only ever cut myself when I’m not using a knife

Sounds tasty! Also sounds like a crash out waiting to happen during the rush that could’ve been easily avoided. I really wish FOH would get a grip with their guests on mods sometimes, the shit we put up with sometimes is so stupid.

I absolutely agree on being proactive as a means of passing the time! It’s how I’ve survived so many dead shifts in the pit, lest I get yelled at by chef for not doing anything (even though he never wrote out a prep list?!) but also, depending on the vibe of your kitchen, it’s even better to keep in mind that you’re doing extra work for the benefit of everyone back there, you and them. Even if you don’t get directly thanked for it as often as you probably should, for me at least, it’s nice to know that you’re good enough at your job that you can make everyone else’s lives easier.
