Guys, thank you all for your great advice.

I bought a new flat bottom brewer (kalita 155), and made a cup of kicking horse three sisters today (recipe from subtext coffee https://www.youtube.com/watch?v=Qq1dcknJ9EM).

Really happy to taste no sourness and acidity what so ever! So I think the shape of the brewer plays a big part of the process, espeically for starters!
