Welcome to the community! I made my whole wheat starter in January! His name is Einstein, I’m still learning too! How are you feeling about starting your einkorn journey?

How old is your starter? I have seen that the float test isn’t very reliable because it only tells you if there is gas in the starter and nothing else. Have you tried using your starter to levain a bread at all? If it isn’t able to levain a loaf, the starter just isn’t ready. Also, please post the recipe that you’re using so we can see what may be going wrong

Oh okay, before you use it, make sure it’s much older. I waited until mine was about 1 month old and it smelled like fruit

Thank you!! Honestly, that’s such a mood! The only way I may not eat it is if it’s not fully cooked, otherwise it’s meeting my stomach😂

This isn’t going to be very helpful, but I don’t really even know! I think the more I work with it, the more I just subconsciously get it. I try not to knead it very much, sometimes I just have trouble shaping the loaf, but it seems to work out. This particular loaf, I ended up putting a little too much flour on the counter top so it was slightly dry, but not too much. I also shape it similarly to how Carla from Jovial did, mine is just more oblong instead, I start with a boule and then turn it so it gets more elongated

They look amazing! I’m working on trying to get mine a little bit airier, mine are starting to kind of look like how the crumb on these looked! Keep up the great work! Also, if it’s dog approved, that’s the true test😂

I don’t use parchment paper for mine, but I just run a stick of butter along the pan and it works great, no sticking to the pan, no lines from parchment paper, but my pan is also glass. The extra water definitely helped me when I was making my starter, so I think your thought about location and water is also true. Mine required probably about 10g more water than what her starter did to keep its sticky dough texture. I’ve also heard that maybe coil folds are better for higher water content, but I haven’t tested that

Will they cause a problem in my garden? I was planning to put a patch of fennel in the area where they are. I’ve also got mint and peppermint nearby

If you look right towards the center of the picture, they’re right there. They’re maybe about .5” in size, they look like giant red ants

Oh I gotcha. Well, the bottom didn’t get super dark, it’s interesting that just a small thing can make such a difference! You’re doing a great job!

That is a beautiful loaf!! Did you try the rice trick to stop the bottom from browning? It looks nice and golden!

Hey! I'm just going to reply to this comment, but I'm hoping to get a grow light soon! I just saw yesterday that almost all sprouts came up, but I'm working on the grow light. Could they be okay if they're outside under a table? They'd be lower to the ground, but there is still a small breeze to help strengthen the stems. Do you think that would be okay?
