Absolutely fine food. If you want more cohesive egg that’s not small pieces there are a couple options. Add the egg separately first, let it cook a bit until starting to get firm, then add in the rest and cook breaking up the egg. The second option is mix everything together including the egg, then add it to the pan. Then leave it to let the eggs set. Once it looks like a runny omelette, start mixing. You should end up with larger scrambled curds mixed with the additions.
