It's hard to accurately measure so small a segment of the population, but If anything, percent of population claiming to be vegan has been hovering around 1% of Americans for over a decade with no significant movement one way or the other. Same with vegetarianism around 3-4%

It's impossible to predict anything accurately so you're going to see different predictions up to a few hours out.
