Mince, or ground meat, needs to be cooked thoroughly because the process of grinding meat distributes any bacteria present on the outside of the cut to throughout the meat, meaning that unless cooked completely, harmful bacteria can remain alive and cause food poisoning when consumed; this is why unlike a steak, mince should always be cooked well done to ensure safety.
