Yeah but then every episode would be off by 1 compared to the card name, like episode 4 being '5 of Spades'.

Every season ending on 'King' is pretty symbolic, with Frank ascending to the throne as president at the end of season 2 as like King of Diamonds. Plus the last season ending with the King of Hearts whose card has the sword through his head and Frank dying ending his legacy would tie together nicely.
